Be Prepared for the Perfect Super Bowl
Calling all sports fans! The 59th Super Bowl is set to kick off February 9 at 6:30 p.m. with the Kansas City Chiefs and the Philadelphia Eagles facing off for this year’s big game. Whether you’re hosting a watch party at home or getting your game on around the community, here are a few DIY recipes, restaurant specials and at-home hosting tips to ensure your Super Bowl Sunday is a touchdown.
3 Must-Try Recipes
Everybody knows the best parts of the Super Bowl–beyond the commercials!—are the delicious and shareable snacks. Below, find three go-to recipes from a Wendell Falls resident that are sure to be crowd pleasers!
Ingredients:
- 5 tablespoons unsalted butter, divided
- 1 large yellow onion, thinly sliced
- 2 thyme sprigs, plus ½ teaspoon chopped fresh thyme leaves
- 12 slider buns, halved
- 1 pound thinly sliced deli roast beef
- 12 slices provolone
- 1 teaspoon chopped fresh parsley
- ¼ teaspoon garlic powder
- 1 tablespoon clove garlic, finely chopped
- 1 ½ cups low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- Kosher salt
- Freshly ground black pepper
Instructions:
- Preheat the oven to 350 degrees.
- Melt butter in a skillet, then add sliced onion and thyme sprigs. Season with salt and pepper. Cook and stir occasionally until caramelized for about 30 to 40 minutes. Once finished, discard the thyme.
- Slice sliders in half. Place bottom halves on a large baking sheet, then place the roast beef, cheese and caramelized onions on top. Add top buns, glaze with melted butter and sprinkle with parsley, garlic powder and a little salt.
- Cook sliders in the oven for 10 to 15 minutes—or until the cheese is melted.
- Time for the dipping sauce! Use the same skillet you cooked the onions to melt butter, then add garlic. Cook until you can smell the aroma, and add your garlic, thyme, beef broth and Worcestershire sauce mix and let simmer, with occasional stirring, for about 10 minutes.
- Serve your sliders alongside the dipping sauce and enjoy!
Salad Ingredients:
- 4 cups of corn
- 1 tablespoon olive oil
- 1 bunch of fresh cilantro, minced
- ½ red onion, diced
- 1 jalapeno, diced
- 1 red bell pepper, diced
- ⅔ cup cotija cheese, crumbled
Dressing Ingredients:
- 3 tablespoons sour cream
- 2 tablespoons mayonnaise
- ¼ teaspoon salt
- ½ teaspoon paprika
- ½ teaspoon cumin
- ¼ teaspoon chili powder
- 4 tablespoons fresh lime juice
Instructions:
- Warm olive oil on medium high and add corn. Pan-fry until lightly charred, for about 10 minutes.
- Once charred, combine corn and all fresh veggies into a bowl.
- Mix all dressing ingredients except for the cheese in a separate bowl.
- Combine veggies and dressing, along with cheese and mix.
- Sprinkle remaining cheese on top with cilantro.
- Serve (or cover and store in the fridge for up to eight hours) and enjoy!
Cookie ingredients:
- ½ cup butter, softened
- 1 cup packed light brown sugar
- 1 egg
- 2 cups all-purpose flour
- ½ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
- 1 teaspoon vanilla extract
Filling ingredients:
- 5 tablespoons all-purpose flour
- 1 cup milk
- 1 cup granulated sugar
- ½ cup butter, softened
- ½ cup solid vegetable shortening
- 1 teaspoon vanilla extract
Instructions:
- Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
- Cream/combine butter and brown sugar in a large bowl. Add egg and beat in until completely mixed.
- In a separate bowl, whisk flour, cocoa powder, baking soda and salt.
- Then combine buttermilk and vanilla.
- Add ⅓ of the flour mixture to the butter/sugar mixture and mix until combined. Then add ½ of milk and mix. Continue and add another ⅓ of flour, the rest of the milk and the remaining flour. Mix until combined.
- Use a 2 tablespoon cookie scoop to scoop dough on baking trays, keeping each mound 2 inches or more apart.
- Bake, one tray at a time, for about 12 to 14 minutes.
- Allow the cookies to completely cool.
- For the filling, whisk flour and milk in a saucepan over medium heat. Cook until thick, constantly stirring with whisk, for about 3 minutes. Remove from heat and allow to completely cool.
- In a separate bowl, cream the sugar, butter and shortening until it's light and fluffy. Add vanilla extract and cooled flour mixture and continue to beat until light and fluffy.
- Transfer the filling into a large piping bag and cool in the fridge for 30 minutes.
- Place half of the cookies with the flat-side facing upward. Pipe the filling onto the flat side, then place another cookie on top, flat side down. Keep doing this to create your whoopie pies.
- Store the finished cookies in the fridge until completely cool.
- Serve and enjoy!
